ageing : This wine is drinking exceptionally well now and will continue to do so till the end of 2019.

100% Shiraz grapes, 12 months in the barrels, perfect for now or to give to a good friend to keep up to 2020.
in the vineyard : Tree wire Perold trellising, the Shiraz was planted in 2003.
about the harvest: Picking started when the grapes were at 24.6°Balling, the acidity in the vineyard were still well above 6 g/l with pH at 3.6.
in the cellar : Fermentation started immediately using WE372 as yeast - generally warm fermentation at below 30°C with pump-overs twice a day. After secondary fermentation the wine was transferred to 2nd and 3rd fill French Oak barrels and aged for 12 months.
