Ripe black current on the nose. Gamey cooked beetroot and ripe plums on the palate with a velvet tannin mouth feel and satisfying dry finish.

Enjoy it with red meat dishes, pizza or pasta. Goes exceptionally well with traditional Bobotie.

As hard as breaking the bedrock to access the worlds riches, so this wine will soften even the most discerning taster.

in the vineyard : Tree wire Perold trellising, Merlot planted in 2003 on Koffieklip.

about the harvest: Picking started when the grapes were at almost 25°Balling, the acidity in the vineyard were still well above 6g/l with pH at 3.5.

in the cellar : Fermentation started immediately using WE372 as yeast - generally warm fermentation at below 30°C with pump-overs twice a day. After secondary fermentation the wine was transferred to 2nd and 3rd fill French Oak barrels and aged for 12 months.
