in the vineyard : Farmed dry-land, thus not irrigated. Selected from various sites on the farm. The Syrah bush vines are aged between 15 - 40 years.
about the harvest: Handpicked early morning, the grapes were hand-sorted and all “under ripe” bunches were removed.
in the cellar : The grapes were partially whole-bunch fermented and the remainder destemmed. ermented in a vast variety of foudres, big French oak barrels and concrete tanks.
