in the vineyard :

The Cinsault coming from a 20 year old vineyard in the Swartland and the Gamay Noir a 30 year old vineyard in Durbanville. With efficient suckering and the removal of excess bunches, only the strongest shoots were left with grapes for optimum ripening. These grapes were harvested to ensure the perfect balance of ripe flavours and fresh acidity.

about the harvest:

The grapes were harvested from two old parcels of vineyards. Owing to the age of the Gamay Noir vine, the yield was very low and was less than 5 t/ha.

in the cellar :

Both the cultivars, being light in colour, meant that the grapes were given about 10 hours skin contact prior to draining just the free run juice for fermentation. This allowed for the perfect colour balance and tannin profile of the wine. The wine was fermented with selected yeast strains to enhance the aromatic profile and to compliment the fresh mouthfeel of the wine. After fermentation was completed, the wine was aged on the lees, in tank, for three months before preparation for bottling.
