about the harvest: The grapes were handpicked.

in the cellar : After being hand-picked, the grapes were gently pressed using only the free run juice. Using selected yeasts the must undergoes fermentation at between 18-22 degrees Celsius for 2 weeks, followed by malolactic fermentation. 97% of the Diamond Collection Cabernet Sauvignon matures in second fill French barrels and 3% in new French barrels for 12 months to allow the flavours to gel and develop complexity.
