in the cellar :

Portions were fermented separately in open vats. Yeast strains suited for each different varietal were used and fermentation temperature was kept between 22 and 27 C.

Maturation in 100% French oak 225L barrels. No fining was done on this blend, with a very light filtration prior to bottling.
Maturation: 14 months in French oak barrels.
