ageing : Keep for 3 to 5 years.

in the vineyard : 7 year old vines from the Trawal area. Deep deep gravel with limestone. Trellised with irrigation and summer pruning for low crop. Yield of 7 tons per ha.

in the cellar : Fermented at 28Â°C for optimum fruit and flavour. Plunging and pumping over at 3 times per day and short skin contact after fermentation was allowed. Matured in 3rd fill, 225 litre Frenck oak barrels.
