The grapes were crushed to closed fermenters and were given pump overs 2x a day and with one aeration pump over. The wines were pressed at 1B and Malolactic Fermentation took place in the barrels. A blend of 50% AWO and 50% French wood. 20% new wood, the balance 2nd and 3rd fill. The wine was in wood for 18 months and then given a light egg fining, before bottling.
