To ensure optimal quality and consistency, the Drostdy Wines are made from selected wines that meet exacting standards.

about the harvest: 

The Drostdy Hof Extra Light Rosé grapes were harvested at technological rather than physiological maturity. Grapes were harvested at 19° to 21° Balling early in January, resulting in lower-alcohol wine.

in the cellar : 

After limited skin contact in the cellar, cold fermentation took place in stainless steel tanks. By controlling the fermentation, a delicate, fruity rosé wine was produced which is low in alcohol yet full of flavour.
