Of all the wines in the range, the Sauvignon Blanc most reflects the cool growing conditions on the farm, with its brisk afternoon sea breezes. It combines minerality and fruit, with the minerality playing a more dominant role on the palate. The fruit is food-friendly, from the fresh spectrum, greengage and unripe prickly pear, with a subtle hint of apricot, while the 5% Semillon gives palate weight and length, without adding to Sauvignon’s flavours. The wine is dry, linear, has a flinty purity, and its salty acidity reinforces the food compatibility, gives a good ageing ability.
The palate has the requisite crispness to partner food or can be enjoyed on its own, leaves the mouth refreshed, ready for the second glass.
