about the harvest:

Grapes were handpicked between 22.0°B and 23.5°B with TA’s of 7.5 g/l and pH of 3.3.

in the cellar :

The juice was handled reductively and left to settle for 3 days after which it was racked and inoculated to ferment at low temperatures. Left on the lees for 8 months before blending and bottling.
