Cape Wine Cellars Merlot

Brilliant dark red, clear and brightcolour. Fragrant, with hints of plums and fruitcake - an abundance of subtle aromas. Mouth filling, up-front fruit with gripping tannins, with good follow-through and aftertaste.

ageing : Merlot is ready for drinking at the time of release, and will mature well beyond the turn of the century. The spicy plum fruit will blossom as the wine ages in the bottle.
in the cellar : After destalking, the free-run juice and berries are inoculated with specially selected yeast strains to start fermentation. The juice is fermented on the skins until the wine maker decides that the correct colour intensity and tannin concentration have been reached, after which the wine is drawn off and the skins pressed to complete fermentation in stainless steel containers. The wine is then oak matured until bottling.
