A full-bodied wine with well-integrated tannins. Spicy, smokey flavours with a velvety finish. The integrated oak undertones contribute towards a well-rounded soft wine. Ideal with ostrich steak, grilled rosemary-flavoured lamb, oxtail or steak.

in the vineyard : Climate: As the Valley lies less than 20 km from the False Bay coast; it is greatly affected by the cool south sea breezes, which prevail in the summer months. Winter brings on the moisture-laden northwest winds, which result in most of the Valley’s 750 mm of annual rainfall.
Soil: Deep red, Hutton, Clovelly soils
Trellising: Hedged (Perold system)
Yield: 4 – 6 tons/ha

about the harvest: Only the best grapes were selected and harvested by hand at 24° Balling.

in the cellar : A pure yeast culture was added, during fermentation it was pumped over frequently until it was dry. After malolactic fermentation it was pumped over frequently until it was dry. After malolactic fermentation was completed the wine was racked twice before going into 225 litre French oak barrels for 12 months. The best barrels were selected and blended after which the wine was bottled without being stabilised or filtered.
