in the vineyard : Grapes were sourced from the vineyards in the Stellenbosch, Paarl, Robertson and Worcester regions. The vines, between 10 and 18 years of age at the time of harvesting, were grown in soils with excellent drainage, ranging from decomposed granite to deep Clovelly and Hutton. Located some 200m above sea level, the vineyards are trellised while appropriate canopy management and row orientation minimises wind damage.

about the harvest: The grapes were harvested by hand at 22 – 24 balling for a riper, tropical aroma on the nose and more volume and fuller body on the palate.

in the cellar : Each vineyard was individually vinified. After crushing, the juice was cold-fermented at low temperatures in stainless steel tanks for around 14 days to preserve intensity of flavour. A portion of the wine was left on the lees for around four months to ensure creaminess on the palate.
