Tokara Limited Release Pinotage 2015

The wine displays a deep dark garnet colour with a ruby red rim. The aromas on the nose are that of wild berries, smoked meats and spicy dried herbs. The palate is packed full of red berry fruit, a fine oak influence with refined silky tannins leading to a dry finish which lingers forever.

 A great piece of meat or a venison stew.

ageing : This wine drinks well now but will benefit from ageing until 2024

100% Pinotage from a single block on Tokara’s property on the slopes of the Simonsberg Mountain.

in the vineyard : Slopes: South and South west Aspects ranging from 360 to 540 meters above sea level.

about the harvest: Handpicked on the 20th February into a cold store overnight. The vineyard cropped at around 10 t/ha.

in the cellar : 
The cooled grapes were de-stemmed, before passing across a sorting table for the removal of all unwanted material after which they are crushed directly into one small 2 tonne wooden upright (foudre) fermenter. Cold maceration took place overnight after which the tank is inoculated with selected yeast. Punching down of the cap was implemented twice a day for extraction until fermentation was completed. After which the free run wine was run off before pressing. The wine was put to barrel for malolactic fermentation after which they were racked, sulphured and put back to barrel for a further maturation. The wines spent a total of twenty-two months in 100% new French oak. The wine receives minimal racking’s during maturation. The wine was bottled in January 2016 after a light fining and without filtration. 1 500 bottles were produced.
