in the vineyard : As its name suggests, the African Sky label carries a range of wines made in the vineyards of the Cape’s famous winelands, graced by tall mountains and fanned by cooling maritime breezes, where the sky constantly changes to reflect a range of micro-climates. Sometimes shrouded in mist or stained by rain, sometimes bracingly clear, the sky is always fresh, clean and nurturing.
The Sauvignon Blanc grapes were sourced from trellised vineyards in the Stellenbosch and Malmesbury regions, situated at 160 to 190 metres above sea level and facing south/southeast/southwesterly. The vines are grown in deep red Hutton and yellowish brown Clovelly soils. The vineyards were planted between 1963 and 1989.
The Semillon grapes were sourced from vineyards in the Franschhoek region, situated at 150 to 190 metres above sea level and grown in alluvial soils. They were planted between 1963 and 1993.
in the cellar : They were individually vinified. In the cellar the Sauvignon Blanc juice received 1 to 2 hours skin contact and was fermented at 15°C for 12 days. After malolactic fermentation, the Semillon was matured in new second and third-fill small wood. The wine was left on the lees for two weeks after which it was racked, blended and bottled. The wine was blended in a ratio of 55% Sauvignon Blanc and 45% Semillon.
