Dark, intense mulberry in colour with cassis, berry and slight minty aromas. These follow through to the palate with hints of vanilla and nuts, full fruit and spicy, smoky overtones.

ageing : This full-bodied, finely balanced wine with firm, round tannins will benefit from bottle maturation for up to 6 years from vintage.

in the vineyard : The grapes for the Hidden Valley 1999 Cabernet Sauvignon were selected from prime vineyards in Firgrove & Helderberg.

about the harvest: The grapes were handpicked in March 1999 into small lug baskets and transported to Grangehurst Winery for destalking and crushing by well-known vintner, Jeremy Walker.

in the cellar : The mash was fermented in open red fermenters ("kuipe"), with regular punching through of the skins until dry, at a temperature of 30ºC. After pressing, the free-run and press wines were blended and pumped into 225lt barrels. The wine was barrel matured for 18 months in 70% French and 30% American oak (1st, 2nd & 3rd fill). The wine was racked out of the barrels and bottled at the beginning of October 2001. A total of 5000 bottles were produced.
