The grapes were harvested middle of February at 25° - 26° Balling.

in the cellar :

Cold soak for 48h before fermentation. Fermentation period 7 - 9 days at 24° - 27° C

Malolactic fermentation on medium toast french oak. Matured further for 7 - 8months before bottling.
