in the cellar : So in the cellar the 5 day cold soak, enough delastages, 30 days on the skins, the best yeast to lift the floral notes and knowing and trusting your coopers and our work is done. A winemaker’s selection of the six best barrels, 80% new French Oak, matured for 16 month prior to being bottled unfiltered and unfined. With alcohol of 14.98 % and a TA of 6.7 g/l all is fine with this genuine Syrah.
