in the vineyard : Semillon grapes from cool climate Elim in Cape Agulhas and Sauvignon Blanc from our Franschhoek Estate.
in the cellar : Semillon and Sauvignon Blanc vinified separately. 12hour skin contact on Sauvignon Blanc, pressed and fermented in 100% Stainless steel. Semillon pressed and fermented in stainless steel then transferred to old 228L barrels for 6months aging on its fine lees.
