about the harvest: Grapes were harvested by hand at optimum ripeness and cooled down to 12°C.

in the cellar : After destemming and crushing, free run juice and light pressings allowed to settle for 48 hours before racking to fermentation tanks. Slow and cold fermentation at 13 °C.
