David Finlayson Cabernet Sauvignon 2019

Produced from four outstanding clones of Cabernet Sauvignon planted on different sites in the Stellenbosch area.  Made to exude absolute purity of varietal character and as such display true Cabernet Sauvignon cassis and blackcurrent flavours. The wine has a fresh, minty herbaceousness backed by mocca vanilla oak. Firm structured tannins and a long finish on the palate show good ageing potential.

in the vineyard : Soil type: Malmesbury Shale on deep red clay

about the harvest: All grapes were hand picked.
Harvest Date: Late February –Early March 2019

in the cellar : 

Sorting of bunches was done before destemming into 70-100 hl fermentation tanks. Remontage was twice daily. Macerated between 7-14 days depending on the flavours in the tank. Pressing softly in pneumatic press before being moved to barrels for MLF and maturation. Blending of Petit Verdot and Cabernet Franc component took place at 8 months before a further 6 months maturation in barrel. Fined with Vegecol and crossflow filtered before bottling.
