in the vineyard : 

Planted in 2009, these 12-year-old trellised vines yield an average of 8 tons per hectare. Elgin Valley is a cool climate wine region with the South Atlantic Ocean just 15km away. The vineyard is located 300m above sea level with North-South face slopes. The cool southerly winds contribute to the cool climate that characterizes its terroir. The average annual rainfall is 1011mm with 366mm falling in summer.

Soil: Weathered Shale soils with a high iron content and Table Mountain Sandstone which is rich in minerals. 

about the harvest: Only Pinot Noir grapes from one selected block were used and harvested between 18.5 – 19.5 °B.

in the cellar : The grapes were whole bunch pressed after sorting by hand. The juice was fermented in a stainless-steel tank with a small percentage fermenting in old French oak barrels. Secondary fermentation took place in the bottle with extended aging on the lees for 14 months prior to disgorging.
