in the vineyard : 60% grapes from our Franschhoek Estate and 40% from Elim (Cape Agulhas). The Elim grapes add minerality and freshness while the Franschhoek grapes show richness in fruit.

in the cellar : Grapes from the various sites are kept separate and picked at different sugars to highlight the differences in terroir. Matured in 1st, 2nd and 3rd fill barrels for 10 months. The barrels are stirred every second week for 3 months giving a full rich mouth feel.
