Fish Hoek is a little settlement just outside of Cape Town on the False Bay coast. It is blessed with a breathtaking beach, where the waves break for the first time in their previously unhindered journey from the Antarctic. Backed by Table Mountain, the locals enjoy the outdoors as a way of life - it is this spirit that we hope to capture in this wine
in the cellar : The grapes are from the vineyards of the Breedekloof region. The grapes were harvested at different sugar levels (21-23 °B) to get a whole spectrum of flavors. The grapes were crushed into press after which they were left for 2-3h on skins. Fermentation took place in stainless steel tanks with different cultured yeasts @ 12-14 °C. Wine was kept on fine lees until blending.
