Very clean and pure. Fragrant and floral nose. Strawberry, raspberry, sour cherry joy on the palate. Juniper bitters. Sweet spices from start to finish. Very enjoyable!

Pair with slow-braised wild rabbit rack on a bed of shredded fried parsnips and roasted pine nuts.

Pinot Noir sidles up halfway through the bottle, revealing a hint of heaven and then leaving you heartbroken. This starts the obsession. Some of us fall so hard we go beyond acquiring bottles, we plant the mercurial grape, usually in land that talks to our heart, not our head.

This wine is from the deep, cold south, where storms smash frigid waves into the rocky coast and where winemakers dream of finding meaning in their lives and loves. It is ethereal and nuanced and perfectly poised to make you smile that knowing smile.

in the vineyard : From selected vineyard sites in the Hemel-en-Aarde Valley (69.5%), Elim (30%) and Overberg (0.5%). Grapes are picked at optimal phenological ripeness and processed at The Drift Estate.

about the harvest: Cold soak at <12°C for 5 days with daily pump overs under CO2. Natural fermentation without added yeast lasted 3 days with 3-4 x daily gentle punch downs; post fermentation maceration followed, pressed using a traditional basket press; Light rack to barrel after 24 hours settling; 3 rackings prior to course sheet filtration before bottling.
