ageing : 3 - 5 years

in the vineyard : The 2020 vintage was characterised by challenging conditions during the growing season. The main reason was the relentless south-easterly wind that not only pummeled the vines, but also blew-in fluctuating air-temperatures. With this degree of stress, the berries ripened unevenly. So much so that among the Cabernet Sauvignon and Merlot vines, not one perfectly ripened bunch of grapes was to be found. The Shiraz variety, the other component in this blend, saved the day. A late ripener, the fruit was perfectly developed at picking time. Fortunately, Org de Rac has made substantial investments in berry-sorting machines, allowing us to remove any deformed and green berries brought forth great phenomenal colour and superb concentration, but wines that are lighter in style than generally experience on the farm, A marked feature of this is that no sulphur was added, allowing for a unique and delicate flavour profile in this Swartland blend.
