Org de Rac La Verne Pinot Noir Cap Classique 2019

Creamy straw with a slight pale ruby tone from the red Pinot Noir skins. On the nose the wine is vibrant and fresh, with nots of peach and citrus, while a tough of cassis lurks on the background. The wine is gorgeous on the palate, the brisk break of bubbles leading to layers of green apple, sour cherry with a comforting presence of brioche.

An exceptional aperitif for every occasion and great with smoked salmon, oysters or enjoy in good company.

about the harvest: The grapes were hand-picked in February, an early picking ensuring the bright acidity required for the making of Cap Classique base-wine.

in the cellar : After fermenting the base-wine, the cuvee was bottled for the magic process of secondary fermentation whereby the tiny bubbles are formed along with the unique flavours a fine Cap Classique is known for. After 14 months of creating bubbles and drawing flavour from the lees, the wine was degorged.
