in the vineyard : The soil is deep weathered granite and we use rootstock 101-14 Mgt. The age of the vines are between 4-25 years and the yield is between 7-9 hectare.

about the harvest: We harvested early February 2000. The 2000 harvest was sunny and dry weather during final ripening stage with a cool breeze keeping acid intact and promoting grape flavours. Night harvested for optimum handling.

in the cellar : Cool fermentation with selected aromatic yeast. We clean (filter) the wine immediately after fermentation to retain freshness.
