about the harvest: We harvested mid-February. We had sunny and dry weather during ripening stage. Harvested at optimum tannin ripeness.

in the cellar : Fermented cool (20-24ÂºC) to retain berry fruit character and pressed before dryness for soft tannins, unwooded.
