Allee Bleue - Magnum Cabernet Sauvignon 2015

A true reflection of the cultivar and the site. Loads of blackcurrant and its leaves, some herbaciousness, even mint, ending with fynbos. All wrapped in subtle oak with some cedarwood, lead pencil and liquorice shining through. Tannins are elegant but does round out the wine and add length.

The saying goes, Cab is King , and I think this vineyard is what helps reaffirm that, in my mind at least. Planted on the red oakleaf soil and at an elevation of 458 m, the vineyard surveys the land it rules from up high. When standing in this vineyard, high up in the Banghoek Valley, surrounded by the Stellenbosch mountains and the natural Fynbos you as a winemaker need not do much, just don’t stand in is way.

in the cellar : The key here is tannin control. So when the tank was ready to press we drain the free run wine and the let the wine trapped in the skins slowly ooze out and drip into 2 barrels. One NFO and one 2nd fill. This was then kept separated and aren’t we glad we did that.
