in the vineyard : Although the region exhibits a variety of microclimates, all of the growing areas within the appellation have cool night-time temperatures that help to keep grape acids intact. Vines are grafted onto rootstock 101-14 Mgt. Trellised vines, planted on a loamy soil. Age of vineyard 8-12 years.

about the harvest: Harvested form specially selected Helderberg vineyards at 24ÂºB the pioneer region for red grapes in South Africa.
Yield 9 tonnes per hectare.

in the cellar : Cool fermentation (22-25Â°C) followed by a further period on skins for added softness.
