Welmoed Reserve Cabernet Sauvignon 2000

Excellent deep ruby red holding well to the edge. Nose is reminiscent of red berry fruits with hints of lead pencil, cedar and vanillin. Excellent, well structured entrance with ripe, dry tannins and a good berry-fruit mid-palate and lingering rich finish. Serve with Tzatziki roast beef or roast rack of lamb with sautéed or pickled vegetables.

ageing : Very drinkable now, or comfortably keep it another 5 years.

in the vineyard : New virus-free material ensures that grapes can be picked at full ripeness resulting in complex, full-bodied wines. The vines are trellised on a 5-wire hedge system, have an average yield of 7 tonnes per hectare, are grafted onto 101-14 Mgt and have an average age of 11-15 years. The vines are planted on loamy sand and weathered granite soil, on the lower slopes.

about the harvest: The grapes were harvested at optimum ripeness in March.

in the cellar : The wine is fermented on the skins until dry. This is followed by Malolactic fermentation. Maturation takes place in small French oak barrels for 12 months.
