Deep ruby red with attractive white frothy head - excellent entrance with well-balanced mouth feel of CO2 richness of the Shiraz fruit and elegant balance of sugar and acid. Powerful intensity and elegant in mouth aromas of pepper cassis and nuts. Persistent clean aftertaste. ageing : This great sparkling wine can easily be kept for 5-10 years, developing with time.
in the vineyard : All of these vines are grafted on R99 and trellised on a 5-wire hedge-system on southeastern slopes. The average age of these vines are 25 years, with a average yield of 7 tonnes per hectare.

about the harvest: Weather during the ripening season was sunny and dry and the grapes were harvested at 22.5°B in February.
in the cellar : Infiniti is our NEW, premium, Méthode Cap Classic range. Stellenbosch Vineyards has managed another first in the South African wine Market with the launch of the Infinity Sparkling Shiraz. This sparkling wine style is more common in Australia, but with a similar climate, we believe that it will be successful in South Africa. The range is made and created by Mike Graham who is one of the foremost sparkling winemakers in South Africa. One year in 2 and 3 fill French oak.
