Winter was cut a little short with temperatures rising quickly in August, creating a longer-than-usual growing season. Near-perfect conditions, windless, warm and dry, were experienced during flowering and early stages of vine growth. Moderate to cool conditions during ripening
resulted in wines with expressive aromatics and flavours, as well as wines very classical in style.
in the vineyard : A Chardonnay vineyard was planted on Waterford Estate specifically to be used to make a Cap Classique.
in the cellar : A double fermentation is where the second fermentation occurs inside the bottle. After fermentation, the bottles are left to age with the lees still inside for a minimum of 6 years. During ageing, the lees add depth and richness to the wine creating complex flavours and a very fine bubble. In September 2022, the wine was taken from ageing and corked for release.
