The Lycaon range of wines comprise a small selection of limited release wines from certified single vineyards. Our aim is to present the very best examples of the cultivar from some top sites in the Cape. The work Lycaon is from the scientific name for a Painted Wolf, that being Lycaon Pictus. Lycaon is derived from the Greek word Lycos.

in the vineyard : A certified single high elevation vineyard on Silkbush farm in Breedekloof. The site is primarily west facing, curving to the northwest and is one of the lightest sites in the cape with maximum possible sunlight hours. It is also one of the highest sites for Pinotage in the Cape at around 700 to 750 metres above sea level. The cooling influence of the altitude results in a long hang time for the grapes, being one of the last Pinotage vineyards to be harvested. Yields are naturally low at around six tonnes per hectare. The vineyard had produced several top-rated Pinotage wines over the years from other producers and is rated amongst South Africa’s top Pinotage.

in the cellar : The grapes were destalked and lightly crushed before being transferred on a conveyor into open stainless-steel tanks. The grapes were cold soaked for 5 days and fermentation began with wild yeast. We then inoculated with a special yeast selected to enhance the cultivars vibrant fruit. The fermenting grapes were hand punched 4 to 6 times a day. We pressed directly into barrel and the wine was matured for 14 months in a mix of French and American barrels, 40% new. Total production 1,333 bottles.
