about the harvest: Hand-harvested
in the cellar : Hand-harvested, de-stalked, and cold-soaked overnight and fermented with special yeast with calculated maceration and pump-over methods.
Skins removed before dry, and aged in French Oak barrels for 16 months. A variety of first, second and third fill barrels were used to enhance certain flavours and complexity.
