about the harvest: Grapes are carefully hand harvested and cooled overnight before being destemmed and sorted.

in the cellar : Fermentation occurs in open top concrete tanks. The Cabernet Sauvignon is aged in first-fill 225L French oak barrels, while the Cabernet Franc matures in 2nd and 3rd fill 225L French oak barrels. The wine is then aged for 18 months in oak.
