in the cellar : The 1999 Chardonnay was made in a similar style to the 1998. Partly fermented in new French oak and partly fermented in stainless steel. This ensures that the wine and wood is well integrated, and that the wood does not overwhelm any of the fruit. After fermentation the wine was aged in the same barrels for 6 months, during which MLF was completed. The final blend was made just before bottling.
