about the harvest: Grapes are picked at optimal ripeness, destemmed and crushed.
in the cellar : The juice is then settled for clarification before fermentation. Fermentation takes place in stainless steel tanks at 15 - 16oC over 14 days.
The wine is then racked and matured on fine lees with weekly stirring to enhance texture and mouthfeel, before bottling.
