The Longaví range is made by two legends from two different continents – Julio Bouchon from Chile and David Nieuwoudt from South Africa. Longaví means ‘snake’s head’ and is also the name of a volcanic mountain at the foot of the Andes mountains that Julio finds particularly inspiring.

about the harvest: Early morning hand harvesting takes place at 22 °B.

in the cellar : Fermentation is done with 30% whole clusters and native yeasts, with aerated pumpovers. The wine then spends six months in untoasted 2 500l foudre. The wine is bottled without stabilisation, fining or filtration.
