in the cellar : The Sauvignon Blanc grapes are hand harvested at optimal ripness between 23B. At the cellar the grapes are sorted and whole bunched pressed, Fermentation occurs in stainless steel tanks. The wine is kept on the lees for 3 months up until the final bottling.
