Our uniquely south-facing vineyards are cooled by the prevailing sea breeze causing the grapes to ripen slowly and develop an unforgettable elegance and complexity.

in the vineyard : From our south-facing vineyards, overlooking Walker Bay on the higher reaches of the Babylonstoren Mountains.

in the cellar : The grapes were hand-picked and cooled overnight, then hand-sorted and destemmed before entering the cellar. After five days of cold maceration on the skins, alcoholic fermentation was initiated. Regular pump-overs during the three-week fermentation assured soft tannins, increased flavour and a deeper colour. Wine was matured for six months in French oak barrels – 15% new oak.
