ageing : Can be enjoyed now but will age gracefully for 5 years from vintage.
Celebrate wines sourced from wind-ravaged, dry-grown, old and uncommercial vineyards - battered by time and overlooked by the mainstream, yet quietly brilliant. These forgotten vines, nestled in remote, out-of-the-way places, thrive in the quiet rhythm of nature. Far from the Crowd - close to our hearts.
Grapes are sourced from specially selected vineyards in the Swartland. They are picked at optimal ripeness and after destemming, the grapes were left in tank to cold soak of 48 hours before fermentation begins. Fermentation then takes place for approximately 7 – 10 days at 24 °C with one full rack and return once a day for the first 2 days, followed by regular pump overs every day until dry. The juice is left on the skins for 4 – 5 days. Post fermentation the wine is racked off the grapes.
The components are aged in a mixture of formats - i.e. French oak barrels, staves and tank without any wood contact. After 6 months these components are blended and made ready for bottling.
