in the vineyard : These grapes are grown on high altitude in the Piekenierskloof mountains and are cultivated under dry land and bush vine conditions.

about the harvest: Harvesting is done by hand to ensure that the grapes arrived at the cellar at its best.

in the cellar : Four days are allowed for cold maceration at 14°C, where after the juice are inoculated with a pure yeast culture for fermentation at 29°C. Fermentation takes five days, with five days more for skin contact. Malo-lactic fermentation and ageing are done in small French oak barrels.
