Abundant fruit with a hint of sweetness
Dellrust Chenin Blanc 2002 is a bracingly fresh off dry wine. A hint of sweetness and crisp acidity is well balanced by fresh tropical flavours. Full in the mouth, with granadilla, guava, ripe melon and a citrus finish.

in the vineyard : This year the grapes for the Dellrust Chenin Blanc came from twenty year old dryland bush vines that produced ten tons per hectare. The vineyard is situated on a cool southerly slope facing False Bay. Cool sea breezes allow for slow, even ripening and retention of flavours in the grapes.
about the harvest: Dellrust Farm produced approximately 200 tons of Chenin Blanc grapes in the 2002 season. Harvesting began at the end of January and most of the grapes were sold to KWV for use in their range of white wines.

The grapes were harvested when optimum ripeness was reached at 23.5º Balling and only specially selected grapes were picked. Harvesting was done by hand, early in the morning.
in the cellar : After crushing and destemming, skin contact was allowed for eight hours to extract more flavour from the skins. At the end of this period the skins and juice were separated by means of a bag press. Only the first 650l of juice per ton was used.This juice was then allowed to settle for forty-eight hours to obtain clear juice for fermentation.

Fermentation was done in a stainless steel tank and temperature was maintained between 12 and 15ºC to prevent loss of flavours. After fermentation the wine was left on the lees for seven days whereafter it was racked and made protein stable with bentonite. The wine was then made tartrate stable by cooling to –4ºC for eight days. Bottling then took place.

Production: 800 cases of which 300 were allocated for export.
