in the cellar : These hand-selected grapes are 100% de-stemmed, fermented with selected yeasts with periodic pump-vers. The wine is left on skins for 6-8 days. The skins are then lightly pressed and blended back into the free run wine. Full malo-lactic fermentation takes place.
