Boschendal Le Pavillon Cabernet Sauvignon Merlot 2001

in the vineyard : The grapes were picked from a number of vineyards.

All the vineyards were pruned to two-bud spurs during July to August and shoots were removed during October. Only two to three shoots were left per hand-spaced spur. After veraison, which took place between January and February, uneven bunches were collectively removed for better flavour concentration.

about the harvest: The grapes were picked by hand and, where spacing allows, by harvesting machine.

in the cellar : The grapes were pressed at completion of fermentation to extract the soft tannins. After fermentation the wine was matured briefly in large oak vats before it was bottled and released.
