in the cellar : The 1999 vintage is a blend of 80% Cabernet Sauvignon and 20% Merlot. These wines were fermented separately in open tanks and the skins were punched down 5 to 8 times per day to obtain optimum colour, tannin and flavour extraction. Basket pressed, then matured in 225 litre French (78%) and American (22%) oak barrels for 21 months before being blended. After blending, the wine spent a year in a stainless steel tank before being bottled at Grangehurst.
