The 1997 Paarl Cabernet Sauvignon was made from perfectly ripe Cabernet grapes grown in our own vineyards and the surrounding vineyards of Paarl Valley. 9% Merlot have been blended in to add softness and structure. 65% of the wine was matured in large oak vats. The 1997 Paarl Cabernet Sauvignon is a full bodied red wine with good, soft tannin. The wine is still very youthful and will definitely benefit from some bottle ageing. Enjoy with roast beef, pork ribs, venison, kidney pie, steak or matured cheeses.
